Valentine’s Day Eton Mess Cake

This indulgent cake blends an easy sponge with a luscious Eton mess mixture and is easy and fun to make; a great one to get the kids involved with a bit of home baking on Valentine’s Day.

250g margarine

250g caster sugar

250 self-raising flour

4 eggs

1tsp vanilla extract

4 meringue nests crushed

Carton double cream whipped to peaks

St. Dalfour Strawberry Preserve – or your favourite flavour

Fresh strawberries, chopped or sliced

Sponge fingers (about 24)

Fresh fruit to decorate

Method

Line and grease two 20cm springform tins

Cream together butter and sugar, add eggs and vanilla extract, then fold in the flour

Divide the mixture between the tins and bake at 180’C for 20-25 mins or until golden brown; leave to cool

Combine your St. Dalfour Strawberry Preserve, crushed meringue, whipped cream and sliced strawberries – try your best to not over mix

Using a palette knife, spread half of the Eton mess mix over one of the cakes, letting it spill over as this will help the sponge fingers to stick

Place the other sponge on top and spread with the remaining Eton mess mix

Press the sponge fingers round the side of the cake

Decorate the cake with fresh fruit of your choice and add a heart ribbon for a Valentine’s touch

Chill in the fridge until ready to serve
