400g good quality sausage meat
50g fresh breadcrumbs – I prefer to use a granary loaf
1 large onion, finely chopped
A few St Dalfour chestnuts, chopped
1 heaped tbsp St Dalfour Apricot preserve
1 tbsp each of chopped sage and thyme
Small handful of chopped parsley
Salt & pepper to taste
Method
Lightly fry the onions in a little oil & butter, then add the sausage meat to brown a little
Mix in the remaining ingredients and leave to cool
When ready to cook, roll into balls or place in a greased ovenproof dish
Bake for 20-30 mins at 180C until golden brown
