- 250 g softened unsalted butter
- 200 g golden caster sugar
- 450 g British plain flour
- 2 large eggs
- 1 tsp vanilla extract
- Pinch salt
- 4tbsp Dalfour strawberry spread or any other flavour that takes your fancy
Method
- Beat the butter and sugar together until pale and creamy, add salt & vanilla extract then beat in the eggs one by one.
- Slowly add the flour and work into a dough
- Wrap the dough in cling film and chill in the fridge for an hour
- Roll out the dough on a lightly floured work surface. Use a large star shaped cutter to cut out the bases, then, using a small star cutter, remove the centres of half the biscuits
- Bake for 8-10 minutes in a preheated oven 190ºC/375ºF
- Once cool, spread the full base stars with St. Dalfour strawberry preserve and sandwich together with the cut-out stars and dust with icing sugar
