Gluten Free Apricot & Chestnut Energy Bites

These tasty chocolate and coconut coated mouthfuls are the perfect healthy gluten free snack to keep you going throughout the day. Naturally sweet, low in fat and free from any cane sugar, they couldn’t be more simple!

Put the chestnuts, raisins, apricot preserve, honey and oats in the blender and blitz on a high speed until smooth.

Recipe suggestion: Why not mix in some chopped dried apricots or St. Dalfour prunes to suit at this stage?

Tip the mix out into a bowl and cover with cling film. Leave in the fridge for at least 30 minutes.

Remove the mix from the fridge and roll it into individual small round balls. The mix will make 25 – 28 balls. Set them aside whilst you melt the chocolate.

In a glass bowl over a pan of boiling water, stir the chocolate until totally melted. Pour into a smaller bowl.

In a separate bowl spoon out the desiccated coconut and set both bowls next to the energy bites.

One by one dip half of the energy bites into the chocolate, making sure they’re totally covered and whilst the chocolate is still wet sprinkle a little bit of desiccated coconut onto the top of each one.

One by one roll the remaining balls in the desiccated coconut, covering them all over. Use a teaspoon to drizzle the coconut rolled balls with melted chocolate.

Put all of the balls into the fridge to set the chocolate, for at least 15 minutes.
