Apple & Passion Fruit Strudel

This seasonal strudel is sure to be a hit with all the family. Delicious, crisp pastry with sweet and sticky apple, tropical mango and passion fruit as well as a passion fruit cream? Yes please!

1 pack of ready rolled filo pastry

6 chopped and diced cooking apples

1 jar of St. Dalfour Mango & Passion Fruit Preserve

20g caster sugar

1tsp butter

10g icing sugar

5tbsp crème fraîche

 

 

Method

Preheat your oven to 180’c

Melt a nub of butter into a non-stick pan on a medium heat. Once melted, add your diced cooking apples and caster sugar (leaving some for later)

Allow your fruity mix to stew for about 25 minutes or until the apples have softened. Set the mix aside in a glass bowl to cool

Take out your pre-made filo pastry sheets and roll out flat onto your worktop. Add a light dusting of flour to the worktop to stop the pastry from sticking

Take your cooled apple mix and spoon flat and evenly across your filo pastry sheet, making sure you spread the mixture right to the edges

Using 3/4 of your jar of St. Dalfour Mango & Passion Fruit Preserve, apply dollops throughout the apple mixture. This will provide bursts of tropical passion fruit flavour throughout the strudel

Gently roll your filled pastry sheet into a roll, making sure the roll is tight yet not allowing any of the mixture to escape out the sides

Carefully place your strudel on a greased and lined baking tray

Brush the top with a little melted butter and sprinkle over your remaining caster sugar

Place on the middle shelf in the oven and bake for 30-40 minutes or until golden brown and caramelised

Whilst the strudel is cooking, add some crème fraîche to a bowl and stir in the remaining St. Dalfour Mango & Passion Fruit Preserve

Leave in the fridge to cool

Once the strudel is nice and brown, cut into manageable portions and serve with your chilled passion fruit cream

Finish with a light dusting of icing sugar
